Demon Hunter and Monk mounts don't have any colour variants. 
For Warlocks, there's just one additional colour which is purchasable by any spec, but you may obtain a third through boss loot.
For Hunters, Paladins, Rogues, and Warlocks, the mount won't change due to spec, but you may purchase additional colours after completing Power Ascended on the artifact for a particular specialization. Unfortunately these don't count as real mounts so we don't cover them here in any detail. Druid flight forms change colour depending on your race, not spec. Each quest was available for two weeks at a time, at which point the next quest became. During Legion, the rare items available from Archaeology were obtained via special quests available in Dalaran. For Death Knights, Mages, Priests, Shaman, and Warriors, the mount will change colour depending on your specialization. Demon hunters earn their first mount during their dedicated starting quest chain (mimimum level 8), while paladins, death knights, and warlocks earn their first class mounts at level 10.
